Farmer D and I tried our hand at homemade bratwurst today. I didn't get any good photos of steps we took as, frankly, my hands were covered in ground meat most of the time! It was an education to say the least! While grinding and mixing the meat and seasonings was not hard it was sticky and our poor old Kitchenaid grinder worked hard on pushing the filling into the casing.
Working with the casing was another adventure all by itself! We used natural casings rather than collagen. In hindsight, and in the future, collagen is the easier choice. We will leave it at that!
In the end we came out with 21 lovely sausages. The picture isn't the best so you will have to trust me that they look much tastier!
